Lucie teaches our Fermentation and Vegan Cheese classes at Demuths. She runs her own business the Bath Culture House where she creates artisan and handcrafted raw, vegan and gluten free food and drink. Her interest in the ancient art of fermentation began during a career as an award-winning cheese maker on the north Cornish coast. Made in Hackney is an eco-community cookery school , based in east London offering lots of different masterclasses, community classes and cookery courses.


I sometimes teach there myself. A simple vegan soft cheese can be made with nuts, herbs and a squeeze of lemon juice or splash of water. Nuts are a great base for these spreads as they pack in the protein and flavour, while adding texture. To make our vegan cashew cream cheese , it helps if the nuts have been pre-soaked in water for about hours beforehand to soften them.


This is a hands on course.

Everything you learn you will be doing yourself. You will get to taste and take home your own cheeses at the end. We will learn about equipment, ingredients and cultures used. Plus get hands on practice making Ricotta, Cottage Cheese , Mozzarella and Yogurt. Well now you can find out with our range of full day courses or short evening or afternoon classes that teache s you the art of cheese making at home without the need for any special equipment (a bucket, cloth and colander).


We will provide all the equipment, milk and starters for your experience – you just show up. Soya free, Dairy free, Gluten free. No additives and no preservatives. Master the art of vegan cheese making with this three hour lesson where you’ll learn first-hand how to make cheese with your expert chef. A treat for vegan cheese lovers.


If you need some tips and tricks on your vegan or just dairy-free journey, we got you covered. In this class , we’ll be making delicious vegan cheese alternatives with natural, plant-based ingredients. For this class we will make Mozzarella with the famous Aquafaba, and the second one we will make is a creamy cashew cheese spread that is great on EVERYTHING! We will sample them both and I will have recipes for all to take home. Classification of Cheese.


The class will be $per person. Vegan cheese is simply the consolidation of the protein mass from nuts, coconut, beans etc. A lactic bacteria may also be used to provide the acidity for this.


Serve on bagels, bagel chips, crackers, or celery.
